
Ingredients
- Pork belly with skin
- Oil
- Rock sugar
- Shaoxing cooking wine
- Soy sauce
- Dark soy sauce
- Water
- Cut pork into cubes
- Boil water in a pot
- Place pork into boiling water for a few minutes until white
- Add one part sugar and two parts oil into separate pot
- Add pork to pot with melted sugar and oil
- Cook until pork is reddish-brown on medium heat
- Turn heat to low and add cooking wine, soy sauce, and dark soy sauce to taste (be liberal with the cooking wine and add dark soy sauce incrementally)
- Make sure that the sauce almost covers the pork
- Cook with the lid on for 45-60 minutes, stirring occasionally and adding water if it dries
- Once pork is cooked, take off lid and keep cooking on high heat until the sauce evaporates or the pork absorbs it
